Origins of Red Velvet Cake
“Velvet” cakes originated in the late 1800’s and were more commonly called “mahogany” cakes due to their subtle reddish color that came from a combination of cocoa, vinegar and buttermilk. The “velvet” in the name referred to the smooth texture of its fine cake crumb. The color of today’s “red” velvet cakes is enhanced with beetroot or red food coloring.
Widely associated with the American South, New York’s luxurious Waldorf-Astoria Hotel and the fancy Eaton’s department store in Toronto, Canada, it is thought to be Adams Extract (a Texas manufacturer of red food coloring) that made red velvet cake so popular in American kitchens during the Great Depression of the 1930’s and 1940’s.
Extracts and food colorings were expensive, and butter was rationed during World War II. To boost the company’s slumping sales, Adams Extract came up with a clever marketing ploy. They created the Adams Red Velvet Cake recipe, which substituted red food coloring and butter extract for the more expensive ingredients, and offered the recipe free at grocery stores everywhere. Red velvet cake became a hit.
Although the cake’s popularity waned during the 1970’s and 1980’s, the armadillo groom’s cake with its deep blood-red center in the 1989 movie Steel Magnolias may have helped revive its reputation.
