About Key Limes
The “Key” lime (Citrus aurantifolia ‘Swingle’) is also called the Mexican lime or the West Indian lime. Probably brought to Florida by the Spanish in the 16th century, the trees were established in the Florida Keys by Dr. Henry Perrine in 1835 and became known as the “Key” lime. Although they flourished, the original groves were destroyed by a hurricane in 1926 and the hardier Persian limes were replanted in their place.
There are significant differences between the Persian or Tahitian limes (Citrus x latifolia)we find year-round at local supermarkets and Key limes, which are not so readily available:
- Key limes are smaller (about the size of a ping-pong or golf ball) and have more seeds.
- Key lime rind is thinner and ripens to a greenish-yellow color (and loses some of its tartness). Although Persian limes also turn yellow when fully ripe, they are sold only when they are still bright green.
- Key limes are more aromatic, tart and sharper in flavor than Persian limes.
- Key limes are a bit sweeter in taste and less acidic.
- Fresh key limes are more difficult to find. They are in shorter supply and do not store well.

Persian lime juice may be substituted for the Key lime juice, but it won’t yield the same results, and we are committed to making the most authentic Key Lime Pies available.
