“Key” limes are special to Floridians. The trees were most likely brought to South Florida by the Spanish in the 16th century. They flourished, particularly in the Florida Keys, and were planted in large numbers. However, a hurricane destroyed many of them in 1926, and the crop never recovered.
Key limes are much smaller (ping-pong to golf ball size) than the more plentiful Persian limes we see every day in supermarkets. They are thin-skinned and ripen to a yellow color, which reduces their acid content and produces a sweeter fruit.
Their most well-known use is in Key Lime Pie, a Key West creation, but the juice also flavors sauces, marinades, soups, margaritas and martinis, to name just a few. Unfortunately, some commercial pies substitute frozen Persian lime juice for Key lime juice, which does not result in the same luscious pie.
