Defrosting/Handling Tips

Remove pastry from tray while still frozen.  Plate Frozen.

Defrost:
Under refrigeration for up to 4 hours. 
Room temperature: 45 minutes (defrosting at room temperature is NOT recommended)

For catering and banquet functions we suggest plating from a frozen state.
