A Quick History of Dessert
It seems people have always liked eating sweet food, but we owe the invention of desserts like those we enjoy today primarily to sugarcane and sugar processing.
Humans have been eating honey since prehistoric times. Desserts, according to Wikipedia, were first made with locally available natural ingredients. In ancient civilizations, for example, people ate dried fruits, honeycomb and honey-coated candied nuts. Sometimes they added them to pastry, creating the first “pies” for Egyptian pharaohs.
During the 7th century in Africa, sugarcane was traded for the first time and introduced to Europeans. By the early 1500s, sugar was being refined in the New World and used in many confections and other things (like rum), but didn’t become widely available until the 18th century. It was very expensive and mostly enjoyed by the wealthy.
In 1519, the Spanish also discovered chocolate in the New World and transported it to Europe, where the first eating chocolate was eventually born. And the Industrial Revolution in the mid-18th century made popular desserts available to the general public because they could now be mass-produced, processed, preserved, canned, and packaged.
