Carrot Cake’s Story
Potentially a descendant of carrot pudding, which dates back to Medieval times, no one actually knows where carrot cake came from. Carrots were used as a sugar substitute in Britain during the Middle Ages because sugar and other sweeteners were terrifically expensive.
Believe it or not, carrot cake has gone through a number of transformations over the years. It has been served in pastries and has been steamed like pumpkin pie and served with sauce. It has also been dished up like plum pie complete with icing.
Carrot Pudding recipes can be dated as far back as 1591 but carrot cake is not referenced until the 19th century. However, there is a distinct possibility that George Washington enjoyed one of the first recorded versions in 1783 on British Evacuation Day. The story is that he received a carrot tea cake at a tavern in Lower Manhattan.
Researchers seem to believe the real problem is centered on the word “cake” which is fairly new terminology (13th century anyway). They suggest that the carrot pudding recipes documented might have been solid puddings given the ingredients included in the recipes.
The first American mention of carrot cake is attributed to the Jewish Council of Women’s cookbook, The Neighborhood Cook Book, which was published in 1912 in Portland. And finally, the cream cheese icing we have all come to know and love did not make its appearance on carrot cakes until the 1960s.
